Christmas Recipes
This is great virgin (non-alcoholic) drink for the Christmas season. It also contains a jolt of vitamin C, and it is low-calorie to boot!
LIME FIZZ
Ingredients
1/3 cup Fresh lime juice
2 envelopes Sugar substitute (eg. Equal, etc.)
1-1/2 cups Carbonated water (like soda water, diet gingerale)
4 small scoops Lime/lemon sorbet
Garnish Fresh mint sprigs
Method
  1. Combine lime juice, sugar substitute and 1/2 cup carbonated water in blender or use a whisk. Blend until sweetener is dissolved.
  2. Divide between 2 tall glasses. Add 2 small scoops sorbet to each glass and top each with additional 1/2 cup carbonated water. Garnish with fresh mint and serve with additional ice cubes if desired.
  3. Serves 2.

FESTIVE CARROT CAKE
Ingredients
1½ cups All purpose flour
1 tsp Baking powder
1 tsp Baking soda
1 tsp Ground cinnamon
½ tsp Salt
2/3 cup Sugar
½ cup Vegetable oil
2 Eggs
1/3 cup Applesauce, sweetened
1 tsp Vanilla extract
1 cup Carrots, finely grated
½ cup Crushed pineapple, drained
Frosting
80 g Light cream cheese
1 Tbsp Butter
1 cup Icing sugar
2 tsp Milk
1 Tbsp Orange juice
Method
  1. Combine the first 5 ingredients in a bowl & set aside.
  2. In a large mixer bowl, combine the oil and sugar.
  3. Beat in the eggs one at a time.
  4. Add applesauce & vanilla.
  5. Gradually add the dry ingredients from the bowl.
  6. Add the carrots & pineapple. Mix well.
  7. Pour into greased & lightly floured 9x9x2-inch square pan or an 8-inch bundt pan.
  8. Bake at 350 deg. for about 35 minutes until toothpick inserted in the middle comes out clean.
  9. Remove from oven & allow to cool for at least 10 mins.
  10. Turn cake out onto a cooling rack. Allow to cool completely.
  11. To make frosting: Cream butter & cream cheese together.
  12. Blend in milk & orange juice.
  13. Add icing sugar gradually & beat till stiffness desired. Spread on completely cooled cake. Garnish with red & green maraschino cherries.
